This year alone, approximately 12,000 Americans have fallen ill from the Cyclospora cayetanensis parasite, experiencing severe symptoms like "explosive diarrhea," vomiting, and body aches. The most perplexing aspect of this outbreak? The parasite is exclusively transmitted through human feces, leaving experts to question how it has so widely infiltrated our food supply.
The Cyclospora parasite causes illness when people consume produce or drink water contaminated with it. Dr. David Relman, a professor of medicine at Stanford Medicine, and other experts suggest that the most common source for major outbreaks is contaminated water used for irrigating crops. Keith Schneider, a food safety professor at the University of Florida, emphasized the scale needed for such an outbreak, stating, "You’d have to have a lot of produce being irrigated with a lot of water that was contaminated by a lot of cyclospora to see this number of cases."

If an infected person doesn't wash their hands properly after using the bathroom, they can easily contaminate food they handle, further spreading the parasite.
